Paleo Banana Pancakes

When I'm craving pancakes these Paleo Banana Pancakes from Paleo Spirit are the ones I turn to. The banana makes them sweet without needing any syrup. The almond and coconut flour are a great combination making it light and fluffy.  Regarding the original recipe, she adds a little honey.  With a ripe banana, you can absolutely omit the honey and it will still be plenty sweet.  One important note, you NEED to sift that almond flour before you measure it out, otherwise your texture may be a bit gritty.  Add some berry compote on top and a couple slices of bacon, and you're in breakfast heaven.

Ingredients

  • 1 1/4 cup blanched almond flour (sifted)
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon celtic sea salt
  • 1 cup full fat coconut milk
  • 1 ripe banana, mashed (about 1/2 cup)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • coconut oil, ghee or butter for frying
  • maple syrup and fruit for topping (optional)

Instructions

1. Sift your almond flour.  I like to set the chunkier bit aside in a mason jar and use it to add to my yogurt for a snack.

2.  Add your bag of frozen berries to a small saucepan one med/low heat and allow to cook down.  You can gently smash it down with a potato masher or leave as is.  As you're making pancakes, it will cook down into a thicker berry sauce you can drizzle on your pancakes in place of syrup.

3. Sift together the dry ingredients into a small bowl.

4. In a medium bowl or the bowl of a stand mixer mash your banana.

5. Whisk in to the bowl with the banana the coconut milk, mashed banana, eggs and vanilla until smooth.

6. Add the dry ingredients into the wet ingredients and mix until well-combined.

7. Preheat a pan or griddle on medium heat and coat with a layer of coconut oil, ghee or butter.

8. Pour, or spoon out about two tablespoons of batter to make small pancakes. (Small pancakes make it easy to manage!)

9. Cook the pancakes for 2-3 minutes per side. (You will usually end up cooking them longer on the first side than the second.)  Drizzle with berry sauce, or simply eat as is!
